Chocolate Chunk Cookie Dough Fat Bombs Recipe
Recipe for the chocolate chunks:
- 1 oz 100% cacao
- 2 tbsp coconut oil or butter
- 2 tbsp heavy cream
- 2 tbsp sweetener (I used 8 drops liquid stevia)
Instructions:
1. Melt cacao & butter,
2. Mix with rest of ingredients, add to the parchment-lined dish with high edges & freeze for 30-45 mins.
Ingredients for the fat bomb:
- 1/4 cup coconut oil or butter
- 4 tbsp peanut butter
- 3 tbsp sweetener (I used 12 drops liquid stevia)
- 1/2 tsp vanilla
- Optional:
- 2 tbsp coconut flour
- 1/2 tsp cake batter extract
Instructions:
1. Melt butter, mix all ingredients, let it cool down in freezer. (check every minute or two & when it is no longer warm remove immediately)
2. While mix is cooling down, chop the piece of chocolate into small chunks.
3. Once the mix is no longer warm, add chocolate chunks to it, & add to 6 non-stick baking cups.
Macros: Serving size is 1 fat bomb.
Recipe makes 6 servings.
- Cals:
- Fat: 21
- Protein: 3.5g
- Net carbs: 1g
- Fiber: 2g
Coconut flour not included in macros because it’s optional. Also, brand of peanut butter and harvest of peanuts will cause the macros to vary. The peanut butter I used had 2 net carbs per serving.
You might be able to replace the peanut butter with cream cheese, but I’m not sure how they would turn out! If someone tries it let me know!
