Filling:

  • 2 pads Cream Cheese (softened)
  • 1/4 cup Sour Cream
  • Tagatose or Granular Sweetener
  • 1 tsp Cornstarch (I know it's not keto, but it helps and is only a few grams)
  • Pinch of Salt
  • Vanilla Extract
  • 2 Eggs
  • 1 Egg Yolk


Crust:

1/2 cup Julian Bakery Pro Granola (low carb)
3 Tbsp Butter

Topping


  • 1 1/2 cup blueberries and raspberries
  • 1 pouch of sugar-free jello mix ( I used raspberry flavor)

Instructions:

1. Preheat oven to 350
2. For the crust grind or blend the granola finely
3. Melt the butter and mix with the granola until moist
4. Distribute the crust mix evenly across the bottom of the 7-8" pan (springform or with parchment paper to take it out easier later)
5. Bake crust in oven until golden brown (approx. 10 mins) then remove from oven and let cool
6. While the crust is baking and cooking mix the cream cheese, sour cream, sweetener to taste, and vanilla in a large bowl until smooth
7. Add in the cornstarch, pinch of salt and mix well
8. Mix in the eggs and yolk on low speed adding one after the previous has just been mixed
9. If the pan is cool to the touch pour the filling onto the crust and transfer place the pan into a larger pan, then fill the large pan with boiling water until about 1 cm below the rim of the cake pan (important: if you are using a springform pan you should wrap the outside of it in tinfoil to ensure water does not get in)
10. Put the cake in the oven for 30-45 minutes. You are waiting for the outside 5 cm of the cake to firm up but the center to still move like jello. If cracks start to form turn off oven immediately
11. The cheesecake must cool slowly, so just open the oven a crack and let it be. Once cooled place in the fridge to finish the setting process

12. For the topping thaw and cook the mixed berries and mash them as they cook, add a packet of jello mix and cool in the fridge until it begins to set. Then spread evenly on top of the cake.
