This recipe I got from Pinterest a long time ago. Please note, it’s really hard to record with one hand.

2 net carbs for each sope only. 
I did not count the chicken, sour cream, etc.

“Dough” (Sopes)

Ingredients:


  • •2 1/2 cups- mozzarella
  • •2 oz.- cream cheese
  • •1 1/2 cups- almond flour
  • •1- egg
  • •garlic salt


Toppings

You could use any of the following:
•chicken (I cooked mine with onion, tomato, garlic then shredded
•carne asada
•marinated ground beef
Sour cream, soybeans w/ chorizo, lettuce, queso cotija & salsa
-melt mozzarella cheese on a non-stick pan.
Once melted, add cream cheese.
Keep mixing/folding both together.

     
-once it’s mixed in together, add almond flour and garlic salt.
Keep mixing/folding both together.
When it looks like it’s all mixed together, turn off pan.
-add 1 whisked egg to “dough” mixture and mix/fold everything together.
-remove “dough “from pan and place on top of parchment paper.
-press down “dough” w/parchment paper and create a large ball.
-start taking out pieces of the “dough” and start molding your “Sopes”
(work hard because the cheese hardens)
-Place molded Sopes in an oven cookie sheet on top of parchment paper.
-Cook in oven for 10-12 min  400 degrees.
-After 6 min take out and reshape any of the Sopes that flattened out with a spoon for a faster process.
Place back in oven for the remaining time.
I know the recipe seems long but it’s not that hard.
