INGREDIENTS ▪️
For The Bread:
  • 4 tbsp coconut flour
  • ⅔ cup almond flour
  • 1 tsp baking powder
  • 2 tbsp monk fruit sweetener (Can sub with coconut sugar for non keto version)
  • ½ cup non dairy milk
  • ¼ cup coconut oil
  • 4 eggs




For the Egg Mixture:
  • 4 eggs
  • ½ cup non dairy milk
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • Butter or coconut oil to grease the pan

INSTRUCTIONS ▪️
  1.  Preheat oven to 350 degrees.
  2.  In a medium-size bowl, whisk together coconut flour, almond flour, baking powder, and monk fruit. In separate small bowl, mix together rest of ingredients,
  3. Add wet ingredients to dry ingredients and whisk until a smooth batter is formed.
  4. Pour into small loaf pan and bake for 45-60 minutes, until toothpick inserted in center comes out clean. Let cool completely before making french toast.


For the Egg Mixture:
 Mix all ingredients in a large but shallow bowl.

  1. In a set a frying pan over medium heat and melt butter/coconut oil in pan to coat bottom.
  2. Cut the pre-baked and cooled bread into slices(as if you bought a pre sliced loaf) about ½” thick.
  3. Dip each slice in egg mixture, coating both sides, and immediately put on hot and greased pan.
  4. Cook each side 2-3 minutes or until each side is browned.
  5. Enjoy warm and top with roasted coconut butter (like we did!), sugar-free syrup, or cinnamon.
