No Bake Low Carb Mini Strawberry Cheesecakes

No Bake Low Carb Mini Strawberry Cheesecakes⁣

6 Servings⁣

Ingredients:


  • 8 oz Cream Cheese-room temp⁣
  • 1/3 c. Powdered (confectioners) Non-Sugar Sweetener(I used Lakanto)⁣
  • 1 1/2 tsp. Vanilla Extract⁣
  • 1 c. Organic Heavy Cream⁣
  • 1 c. Diced Fresh Strawberries⁣
  • 3/4 c Finely Crumbled Cinnamon Pecan Crunch Lolli’s Low Carb Granola⁣

Instructions:


1. Place 6 jumbo cupcake liners into a jumbo muffin pan. Into each liner place 2 TBLS of the granola and with your thumb press tightly to pack the granola into the bottom to form a crust. Set aside.⁣
2. In a large mixing bowl add cream cheese, sweetener, vanilla, and heavy cream. Using an electric hand mixer beat until creamy. Stir in the strawberries. Evenly distribute the cream cheese mixture amongst the 6 liners. With a spoon smooth out the tops.⁣
3. Cover and place in the freezer for approximately 2 hours or until set. You can also place in the fridge but it will take much longer to set up. We were just too impatient to wait that long. ⁣
Optional- top with extra granola and strawberries.⁣

*NOTE*
If you use frozen berries for this it will not set up like a cheesecake. Although, it will still be VERY delicious.
