90-second bread
- 3 tablespoons almond flour
- 1 egg
- 1/2 teaspoons baking powder
- 1 1/2 tablespoons butter, softened
- 1/2 teaspoon sweetener (I use Lakanto)
- 1 teaspoon sour cream
- 1 tablespoon shredded mozzarella
- cooking spray
- INSTRUCTIONS
Combine the ingredients in a separate bowl and mix well.
Pour the batter into the ramekin and microwave for 90 seconds. Cut the bread in half to make sandwich buns. Then toast it in a skillet with some butter.
It ALWAYS tastes better toasted!

- Salt and pepper to season⠀
- 3 tablespoons lemon juice divided⠀
- 1 tablespoon olive oil⠀
- 2 tablespoons unsalted butter⠀
- 5 large cloves garlic finely chopped or minced⠀
- Salsa:⠀
- 3 tomatoes, finely chopped⠀
- 2 tablespoons red onion, finely chopped⠀
- 1 tablespoon fresh cilantro leaves, finely chopped⠀
- 1/2 Serrano chile (or jalapeño), stems, ribs, seeds removed and finely chopped -- adjust to your heat preference⠀
- 1 small clove garlic, crushed⠀
- 1 tablespoon lime juice⠀
- 1/4 teaspoon salt⠀
- 1 large avocado, sliced⠀
