This is my 90-second bread (recipe below) with a fried egg and Canadian bacon. I shared this and promised to share the recipe, so here it is!!

90-second bread



  • 3 tablespoons almond flour
  • 1 egg
  • 1/2 teaspoons baking powder
  • 1 1/2 tablespoons butter, softened
  • 1/2 teaspoon sweetener (I use Lakanto)
  • 1 teaspoon sour cream
  • 1 tablespoon shredded mozzarella
  • cooking spray




  •  INSTRUCTIONS

Spray a medium-sized ramekin or mug with cooking spray.
 Combine the ingredients in a separate bowl and mix well.
 Pour the batter into the ramekin and microwave for 90 seconds. Cut the bread in half to make sandwich buns. Then toast it in a skillet with some butter.


 It ALWAYS tastes better toasted!

Salmon:⠀

  • 20 ounces (560 g) skinless salmon fillets (each fillet should weigh about 5 ounces or 140 g)⠀
  • Salt and pepper to season⠀
  • 3 tablespoons lemon juice divided⠀
  • 1 tablespoon olive oil⠀
  • 2 tablespoons unsalted butter⠀
  • 5 large cloves garlic finely chopped or minced⠀
  • Salsa:⠀
  • 3 tomatoes, finely chopped⠀
  • 2 tablespoons red onion, finely chopped⠀
  • 1 tablespoon fresh cilantro leaves, finely chopped⠀
  • 1/2 Serrano chile (or jalapeño), stems, ribs, seeds removed and finely chopped -- adjust to your heat preference⠀
  • 1 small clove garlic, crushed⠀
  • 1 tablespoon lime juice⠀
  • 1/4 teaspoon salt⠀
  • 1 large avocado, sliced⠀
