Keto Mixed Berry Mug Cake
Ingredients:
- 2.5 tbsp butter
- 2 tbsp coconut flour (or 1/2 cup almond flour)
- 1 egg
- 1.5 tbsp sweetener (I used erythritol)
- 1/4 cup mixed berries
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
Instructions:
Melt butter in mug, add everything except the berries and mix well, gently mix in the berries, microwave for 90 seconds or until firm! (You can also bake 10-15 minutes at 350F)

Macros will vary based on what kind of berries you use. I used frozen blueberries, raspberries, blackberries, and strawberries. Also, make sure to calculate the macros for yourself if you use almond flour because it will be a lot higher in calories!
