Mini zucchini pizzas. I just use the Prego farmers market (5 net carbs per half-cup) because I can’t get around paying double for Raos, but if you do like Raos, is it worth the extra money?
1. Chop zucchini into 8-12 pieces depending on your preferred thiccness, pat dry with paper towel, then season. 2. Add butter or oil to a frying pan with zucchini on medium heat and let zucchini cook for 1 to 2 minutes on each side 3. Remove zucchini and dry with paper towels on both sides, then move to parchment lined baking sheet. Salt & add rest of the ingredients (I added the pepperoni, then the cheese). 4. Bake in oven around 350-375F for 5-7 minutes or until cheese melts, let cool, and enjoy! You can also broil for 1-2 minutes for extra crispness. Macros: Serving size is half the recipe (approx 4-6 pieces) Calories: 251 Fat: 22 Protein: 11 Net carbs: 2.3 Fiber: 1.7 (Marinara not included in macros) It might be better to add half of the cheese first, then the pepperoni, then the rest of the cheese because if you do it the way I did it, the pepperoni doesn’t stick to the zucchini that.
